Quick Vegetarian Chili with Avocado Salsa

OK, so I Tweeted that my wife was making veg chili tonight and it smelled great.  Someone asked for the recipe so here it is (I would have posted a picture, but there was none left over!):

Vegetarian Chili

  • 2 tsp canola oil
  • 1 c. chopped onion
  • 1 c. chopped red bell pepper
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 3 garlic cloves, minced
  • 4.5 oz. can chopped green chiles
  • 2/3 c. quick cooking barley
  • 1/4 c. water
  • 15 oz. can black beans, drained & rinsed
  • 14.5 oz can no-salt added diced tomatoes, undrained
  • 14.5 oz. can fat free vegetable broth
  • 3 tbsp. chopped fresh cilantro
  • 6 tbsp. fat free sour cream
  • 6 lime wedges
  • Tortilla chips
  • Avocado Salsa (see below)
  1. Heat the oil in a Dutch overn over medium-high heat.  Add onion & bell pepper saute 3 minutes. 
  2. Add chili powder & next 4 ingredients (chili powder through green chiles), cook 1 minute.
  3. Stir in barley & next 4 ingredients (barley through broth), bring to a boil, cover and simmer for 20 minutes or until barley is tender.
  4. Stir in cilantro.
  5. Serve with sour cream, lime wedges, chips and avocado salsa.

Avocado Salsa

We always at least double this recipe because it's sooo good!

  • 1/2 c. finely chopped peeled avocado
  • 1/3 cup chopped seeded tomatoes
  • 2 tbsp finely chopped onion
  • 1 tbsp. finely chopped jalapeno peppers
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp fresh squeezed lime juice
  • 1/8 tsp salt
  1. Combine all ingredients and mix gently.  Serve immediately...yum!

Because I couldn't look geekier

Yup, as if this neck thing couldn't get worse...

 Went to the doc today. The steroids aren''t working so well, so now we're on to a traction device and discussing our next options. More injections, cervical decompression therapy or disc replacement surgery. Fun fun fun! And I get to wear this uncomfortable thing!!!

Have you seen this bike?

Holy cow. Someone stole Lance Armstrong's Time Trial bike at the Tour de California. If you see it, grab it, take it for a test ride (ha ha), and get it back to Lance!!! 3 other bikes were stolen from the Astana truck last night too. Wow!!!
